4 Cups Heavy Cream
3/4 Cup Sugar
4T Lemon Juice
2 Vanilla Beans
1/2 Cup Warm Water
1/4oz Powdered Gelatin
Zest of 1/2 Orange
Zest of 1/2 Lemon
1. Slit vanilla and scrape the flavorful bits from the bean.
2. Dissolve gelatin in warm water in sauce pan. Add heavy cream, lemon zest, fresh lemon juice, the vanilla scrapings and sugar.
3. Stir and let cook until it reaches 160 F.
4. Portion the liquid into 8 ceramic dishes.
5. Chill overnight in the refrigerator.
