1 Pork Tenderloin or Pork Chops
½ Cup Herb Speatzle
1oz Applewood Smoked Bacon Slab
1 ½oz White Cheddar Sauce
1/4t Sea Salt
1/8t Black Pepper
1. Season and sear pork to golden brown, place in saute pan.
2. Add bacon, render and toast the speatzle, add cheese sauce.
3. Place speatzle in ring mold, cut 3-4 bias slices place on spaetzle, garnish with fried chard.
4. Top with rest of pork. Finish with onions.
