Yield: 4 servings
1 Cup Fish Stock
1/2 Cup Butter
24oz Israeli Couscous
1/2lb Mahi Mahi
½oz Soy Glaze
1. In a medium saucepan, melt butter.
2. Add the fish stock and bring to a boil.
3. Add the couscous and let it simmer to 165 degrees and add the soy. Season to taste.
4. In a large bowl, place 6 ounces of couscous.
5. Grill the mahi mahi and brush with soy glaze. Place on top of couscous.
