For use in Prosciutto and Basil Wrapped Lamb Chops
2oz Onions (finely diced)
2oz Carrots (finely diced)
1½T Olive Oil
1t Rosemary (chopped fresh)
3½ Cups Water
Salt and Pepper (to taste)
1. Heat olive oil in a small saucepan on medium heat. Add onions, carrots and rosemary.
2. Cook on medium heat until onions become translucent. Add lentils and water and cook for approximately 20 minutes or until lentils are tender. Season with salt and pepper to taste.
