For use in Bayou Shrimp and Grits
1T Olive Oil
2T Onions (diced)
1T Garlic (minced)
28oz Diced Tomatoes
1t Italian Seasoning
1t Chipotle Peppers (canned, chopped)
¼ Cup Parsley (chopped)
1. Heat olive oil in pot. Sauté onions and garlic until onions are translucent. Add tomatoes, sugar, Italian seasoning and chipotle peppers. Stir and bring to simmer.
2. Simmer 45 minutes on low to medium heat, stirring occasionally.
3. Remove from heat. Puree until smooth. Stir in parsley. Keep warm until needed.
